The Pederson
One of these looks like it would be fun to ride, and it is under 10 pounds.

That thing is beautiful but I don't believe it can be done under 10 lbs.

What's the deal with nice townies?

A nice townie is a wonderful thing. Its convenient in a way that a road bike and mountain bike never will be. My townie is the bike I can lock up and forget about because to the untrained eye its nothing special. I've ridden so many nice bikes now that it would be too hard to go back to riding something crappy.

Signal bikes requires  "a $1000 deposit to build a bike, $500 to get on the list, and a second $500 when your frame is ready to send to paint."

The guys who ride obscenely nice townies must either be touring or disgustingly wealthy.

I feel like this is contradicting itself

I don't think I'm contracting myself. Nice doesn't mean expensive. I consider a nice bike anything that serves its purpose well.

My townie cost less then 200 to build and it looks exactly like an 80s era steel single speed. Thieves usually steal flashy bikes or those with crappy locks. Maybe, someday, I'll encounter one who knows how nice an internally geared sturmey archer hub is. Shit happens. Until then, I will ride my townie to the bars without trepidation.

A bike can ride well without being expensive or flashy. You just need the right collection of mechanically sound parts within a certain budget. e.g. I once had an x-4 derailler that shifted better than my older generation XTR.

Does that make sense?

New Cannondale Jekyll

This bike has two shocks and works by"pull" versus the more traditional "push" and some other cool marketing stuffs

That Signal touring bike doesn't seem to have brazes for a rear rack which seems poorly planned.  Maybe I am just missing it.
I could be wrong.
